Labor Day Weekend and My First Pie (#15)!

This past Labor Day weekend was full of family, fun and relaxing, so in other words, it was pretty much perfect! We had a great day on Saturday taking Nathan's campaign literature around in the community, and one of my best friends Emmie even came and helped us out! She is wonderful, that girl. The weather was seriously amazing - it was sunny, breezy and warm, so spending the day outside was just awesome.

Sunday (our one non-campaign day) was another perfect day to relax. We threw a football around the yard to commemorate the last football-free Sunday and basically just spent a great day having fun and relaxing together. :) We also got to hang out with my Phi Mu little sister Angela and her boyfriend Brian, who came all the way to my house to visit us! It's definitely much harder to fit in friend-time now that I have graduated and live at home, but it's always worth it to get to spend time with great friends. :)

That night, I decided to complete the first installment of number 15 on my 23 by 23 list and try out my first new recipe! I wanted to make a dessert, so I looked around online and found a simple, delicious-sounding recipe for a Peach-a-Berry Pie. It was the first pie I've ever made, so I cheated just a little and used store-bought pie crust; maybe next time I'll try to make my own. :) Nathan even helped me cut up the peaches - anything in the name of pie!

It came out looking a little oozey, but pretty good! The combination of peaches and raspberries was really delicious - super sweet with a little bite. It was pretty simple to make and it made a great end-of-summer dessert.

My one mistake might have been that I got a little impatient and served it a little too warm because the pieces didn't really hold their "pie" shape. However, Nathan and Brian enjoyed two pieces each (and Nathan polished off another one the next day), so I would say that especially for my first pie, that's a pretty successful approval rate. :)

Ohhh, my! That pie sounds sooo delicious! You're right, you always have to let pie sit for a while for it all to "coagulate" together ;-) It's soo hard to wait though! It doesn't matter what it look like, as long as it tastes goo! Way to go :-)
